Between 1977 and 1981 Liz lived in Ireland with her late husband, William V. Shannon, who served as the American Ambassador to Ireland during that period. While in Ireland, she wrote the history of "Deerfield", The American Ambassador’s home in Dublin. Upon returning to Boston, Liz led eight tours of Americans through Ireland, focusing on its history, politics, art and culture. In 1992 Liz was named by Irish American Magazine as on of the "Top One Hundred Irish Americans" in the United States. Liz lectured on Ireland and Irish affairs throughout the United States. In November 1994 Liz organised and chaired a three-day Conference of Irish and American women at Boston University bringing 100 women from the North and South of Ireland. Liz is a Co-Founder and Board Member of "Ireland’s Children", a foundation to help serve the needs of deprived children in Northern Ireland. Liz is also a founder of the Shannon Fellowship at Boston University in memory of her late husband. The fellowship brings over an Irish graduate student to Boston University each year, pays full tuition, room and board for a year’s graduate study.
